The Bearfoot Bistro has earned a reputation as one of Whistler’s culinary hot spots and entertaining dining experiences. From the centre of the dining room a staircase drops to the wine cellar, stocked with one of North America’s most impressive collections of champagne and wine. The whimsical Champagne Bar, custom-made in pewter, features a rail of ice that cradles, cools, and illuminates your champagne flute from below. In the stylish dining room with its high-backed leather chairs, Venetian masks, hand-painted Bopla plates, and Riedel crystal stemware, diners watch the evident passion and dedication with which Executive Chef Melissa Craig stewards her team of 20 in the open show-kitchen. Melissa recently won the Gold Medal award when she competed with the top chefs in Canada in the Canadian Culinary Championships

Great Bear Nature Tours , Port Hardy, BC

 
 

Great Bear Nature Tours offers world-class wildlife viewing excursions in the Great Bear Rainforest on the central coast of British Columbia. Excursions are based at the remote floating lodge, where guests savour the rare gift of close observation of grizzly bears in their natural habitat each day and still be treated to wilderness-gourmet cuisine and soft beds at night. Hastings House, Salt Springs Island, BC
 

This stately manor house was built in 1938-40 by Warren Hastings to replicate his family’s 11th century home in Sussex. The 18 handsome residences on the property range from the original turn of the 19th century farmhouse to a Hudson’s Bay Post house. A full spa, 95-seat restaurant, and mature garden, draw guests from all over the world. (Conde Nast Traveler named Hastings House to the Gold List of American Properties.) To celebrate its 25th anniversary, Hastings House has published an exquisite cookbook full of recipes and historical anecdotes. Salt Spring Island, dubbed the ”organic Food capital of Canada”, boasts wineries cheese specialists, organic vegetable growers and fresh seafood.

Chef Marcel Kauer creates legendary meals using ‘fresh that morning’ ingredients, inspired by the season’s bounty from the fertile kitchen gardens and orchards. Recent accolades include the Zagat Survey’s award for “Top Canadian Resort”.

King Pacific Lodge, Great Bear Rain Forest, BC

 

King Pacific is a floating luxury lodge that is towed to uninhabited Princess Royal Island from Prince Rupert for the May to September season. The Lodge, which has 17 rooms and suites, is a member of the prestigious Rosewood Hotels & Resorts collection. Guests may see pods of humpback whales and orcas, porpoises, sea lions, seals, sea otters and black bears. The rivers and ocean here are filled with Chinook, Coho, Chum and Pink salmon, halibut, rockfish, lingcod and yellow eye. The lodge has been a leader, establishing a number of firsts, in non-retention fishing. The lodge was the first tourism business in British Columbia to sign a working protocol with an indigenous people, the Gitga’at.
