NEW MENU AT BEARFOOT BISTRO IS RUSTIC YET REFINED
Whistler, BC: Bearfoot Bistro Executive Chef Melissa Craig has introduced a new menu for the Champagne Lounge, inviting patrons to sample the more casual side of Canada’s best chef. With 15 delectable items, discover seven new dishes and eight favourites in the revamped Lounge. Gone are the foie gras and stone crab on ice in favour of organic Pemberton beef burgers and Quebecois poutine. It’s bistro-style French food in a return to the tried and true; reinvented with Craig’s modern twist, comfort food is the star.
A propos to the times and perfect fare for hungry après skiers, the menu ranges from the traditional to the imaginative. Find rustic onion soup with cave-aged Gruyere side-by-side with fresh daily sashimi plated with pickled shitakes and fresh jalapeño.
Most germane, however, to a menu of cozy comfort foods is the ubiquitous Mac n’ Cheese. When done by Craig, this mundane mainstay turns gourmet grub with black truffle, Parmigiano- Reggiano and creamy Delice de Bourgogne. Satisfying and savoury, try the new Bearfoot Poutine made with Quebec curds and gravy, while hand-cut Frites with Truffle oil and classic Caesar Salad remain, all for $10. Tuck into a rich and delicious Tartiflette baked with organic Pemberton spuds, Reblochon cheese and bacon, soul-warming on a crisp mountain night.
For champagne taste on a domestic beer budget, find fresh oysters on the half-shell for under $10 per half dozen from 3-6pm.
